David Venable has a new cookbook full of comfort foods. This time of year I start craving those types of dishes. As I browsed through the cookbook “In The Kitchen With David,” I started marking pages of dishes I want to make. Like his Ultimate Macaroni and Cheese or Cheeseburger Casserole. Desserts like Apple Crisp or Pineapple Upside Down Cake. Everything looks so good.
I wanted to try a recipe from his book and since I had lots of summer squash sitting on my counter I decided to make Summer Squash Fritters with Garlic Dipping Sauce. These fritters came out crunchy and flavorful, add the garlic dip and they were addictive. I will share the recipe with all of you…it came directly from David Venable’s cookbook, page 98.
Ingredients
- Garlic Dipping Sauce
- 2 garlic heads, peeled
- Extra virgin olive oil
- 1 cup mayonnaise
- 3 tablespoons fresh lemon juice
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1/4 cup minced fresh chives
- Summer Squash Fritters
- 1-1/4 cups all-purpose flour
- 3/4 cup shredded white cheddar
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground pepper
- 1 teaspoon garlic powder
- 2 large eggs
- 1 cup cold beer
- 1 cup grated zucchini
- 1 cup grated yellow squash
- 1 small onion, halved and thinly sliced
- 1/2 cup canola oil for frying
Instructions
- Make the dipping sauce by roasting the garlic heads drizzled with the olive oil until soft and golden (approximately 30 minutes). Cool the garlic, add all ingredients (except chives) to a food processor and pulse to combine. Remove and sprinkle with chives.
- For the fritters: combine the flour, cheddar, salt, pepper and garlic powder in a large bowl. In a separate bowl, gently whisk the eggs and beer. Pour the egg mixture into the flour mixture and stir until combined. Now add the zucchini, yellow squash and onion.
- Heat canola oil in heavy bottomed skillet over medium high heat. Drop 6 individual tablespoons of batter into the oil and fry until golden brown (approximately 3 minutes per side). Drain the fritters.
- Serve fritters with the garlic dip!

My husband and I make a point of watching him each Sunday afternoon.
He seems to be genuine in his conversations with the vendors and with the customers when speaking to them on TV.

Those recipes sound really delicious. Would love a have his cookbook. Sadly, I lost ALL of beloved and treasured books when a fire broke out in my kitchen and then swept through my entire home, destroying everything I owned, including my two beloved English Bulldogs, who I could not save.
