Weekend Wrap Up – Cupcakes, A Movie and Soup!

I must be tired, I can’t even think what we did this weekend.  Hmm…let me think.

Oh yea, I remember now…

Friday morning was spent with Emily’s home economics class.  We went to Sweet Charley B’s Cupcakery to see how the owner, Amanda, has incorporated baking into a business.  The kids all walked away with the best cupcakes EVER!  The parent drivers did too.  I am pretty sure every parent purchased at lease 1/2 dozen to take home.  YUM!

Emily was wanting to go to Olive Garden for dinner, a restaurant we normally don’t frequent.  It was so good and the kids are now hooked.  It will have to be limited somewhat since it is out of our normal Friday night budget.

This weekend we were all home without anything on the calendar.  It was exactly what we needed.  Saturday we did our normal chores.  I also took Emily to Pier One so I could find an ornament for an exchange I am going to tonight with some  girlfriends.   She now loves Pier One.  We ran a few other places and then headed home.

We decided to watch The Avengers as a family in the evening.  Brad had seen it but no one else.  It was nice having a family movie night.  It’s been ages.

I would have loved relaxing on Sunday but there were things that were bothering me that needed to be done.  I cleaned out a few of the kitchen cupboards and then went through my closet.  I wanted to get rid of all the clothes that are too big.  I am not going back to those sizes and this insures I won’t.

After eating at Olive Garden Friday night we decided to make the Chicken and Gnocchi Soup that is very similar to theirs.  It was delicious and simple to put together.  Here is the recipe I followed.  The only change I made was using fat free half and half.  Doesn’t it look good?

Another week is ahead of us with work, school and trying to find an exercise program I will enjoy.  Our 90 Day win group has made some major changes and it is no longer doable for me to participate.  This is on my to do list for this week…finding my fit.

Dad And The Kids Will Impress Mom This Mother’s Day – Easy Breakfast Recipe!

Okay Dad’s!  Are you trying to figure out what to make mom for Mother’s Day breakfast?  I have the easiest and most tasty dish ever!  The best part is you can make it just the way “your mom” likes it.  The kids can even get involved, it’s that easy!

If you can put ingredients into a mixing bowl, stir, pour into a casserole dish and bake…YOU CAN DO IT!!  That’s all there is to it!  Sound easy?  Let’s get started!

  • 6 eggs, beaten
  • 2-1/4 cups milk
  • 1 teaspoon dry mustard
  • 4 bread slices, cubed
  • 1 pound kielbasa (or substitute your choice of bacon, browned sausage, sausage crumbles, veggies sausage - the options are endless)
  • 1 cup sharp cheese, shredded


  1. Add the eggs to a large mixing bowl and beat with a fork
  2. Add the milk and dry mustard
  3. Have the kids tear the bread into small pieces and add to mixing bowl
  4. Slice meat into bite size pieces and add to the bowl
  5. Add cheese and mix together
  6. Spray 9x13 pan with non-stick spray
  7. Pour egg mixture into pan
  8. Bake for 60 minutes at 325 degrees
  9. Make this the night before and refrigerate. Pop it in the oven in the morning while mom is still sleeping. She will wake to the smell of breakfast casserole. You and the kids will be a hit,I promise!
